The word Chak-hao means fragrant rice, and kabok refers to a category of traditional puffed, popped, or roasted rice items in Manipuri cuisine. To make this particular snack, the nutritious black paddy grain is dry-roasted or popped in a heavy vessel. The tough outer husk is then separated, leaving behind light, crunchy, dark-purple puffed rice clusters with a distinct nutty aroma.
